Kokumori Rice Puff Series X Nutritionist's Ramblings - Nutritionist Sun Yuying

For dietary control to be effective, the most basic requirement is to "reduce sugar".
"Sugar" includes both sugar and refined sugar. Sugar refers to starchy foods such as rice, bread, noodles, and sweet potatoes that we eat in our three meals, while refined sugar refers to sugars such as granulated sugar, fructose, and brown sugar.
Sugar is not completely off-limits, but the amount should be halved. If you normally eat one bowl of rice a day, reduce it to half a bowl during the sugar reduction period. Excessive intake of refined sugar is harmful to the body, so it is best to avoid it as much as possible.
People who are trying to control their diet often ask, "I've eaten less, but why is it still not working?" One reason for this is the "seasonings." In addition to food, seasonings also contain sugar, salt, and additives. Too much sugar can easily be stored as calories, while salt can easily cause water retention. Both are bad for the body, so you should pay special attention when choosing seasonings.
This summer, I discovered a series of seasonings suitable for reducing sugar and healthy eating – the Gusheng Rice Flower Organic Series. The entire series has very simple ingredients, using natural organic raw materials and brewed with Japanese technology. The flavor is excellent. You don't need particularly strong cooking skills. Just add a spoonful to your daily dishes, and the overall flavor will be very Japanese. Everyone can easily become a chef!
Rice Flower Organic Alcohol Millin
Mirin, also known as mirin, is a seasoning commonly used in Japanese restaurants. It's used in dishes like teriyaki chicken, oyakodon (chicken and egg rice bowl), and sukiyaki, giving them a unique sweet flavor that is thanks to mirin.
Rice Flower Organic Rice Lin uses naturally fermented Taiwanese organic rice, which can replace sugar, MSG, etc. It can improve the taste of ingredients, reduce saltiness, remove fishy smell, enhance freshness, and increase the luster and aroma of ingredients. It is suitable for marinating meat, stir-frying vegetables, and making sauces.
All-you-can-eat sukiyaki
Ingredients:
-80g of firm tofu
- 105g of beef shank
200g of cabbage
- 50g of shiitake mushrooms
- 50g onion
-5g of scallion whites
Sukiyaki sauce:
- 30g soy sauce
-Mihua Organic Alcohol Mirin 30g
-30g of rice wine
- 60g of water
-5g oil
practice:
1. Heat a pan over low heat, add the white parts of scallions and onions and sauté until they turn caramelized and fragrant.
2. Pour in the sukiyaki sauce (soy sauce & rice flour).
3. Add cabbage, shiitake mushrooms, and firm tofu, then cover the pot and let the vegetables release their moisture naturally.
4. After boiling, cook the beef shank slices in the broth until done.

The standard sukiyaki sauce is made with soy sauce, organic rice wine, and rice wine in a 1:1:1 ratio. However, based on my testing, I found that organic rice wine has a high alcohol content and a sweet taste, so only a small amount is needed to enhance the flavor. You can also add a small amount first and then adjust it according to your own taste.
We use high-protein, low-fat tofu and beef shank. If you have a large appetite, you can add more vegetables to make you feel fuller. The vegetables are very low in calories and high in fiber, so you can eat as much as you want without worry!
Soft-boiled egg

Ingredients:
4 eggs
- 30g soy sauce
-30g of rice wine
-Mihua Organic Alcohol Milin 15g
-water
practice:
1. Place the eggs in an electric rice cooker, add one cup of water, and steam for 12 minutes until the yolks are about 70% cooked.
2. Prepare a large bowl of cold water, place the boiled eggs in the water to cool and peel them. (You can tap the eggshells slightly to speed up the cooling process.)
3. Pour soy sauce, rice wine, rice puff organic alcohol rice syrup, and water into a pot and bring to a boil to make a sauce. Let it cool.
4. Soak the cooled eggs in the cooled sauce and refrigerate for 12 hours.
Eggs are a high-quality source of protein, making them a great side dish or a perfect late-night snack when you're feeling peckish, without the worry of putting a strain on your body.
Organic brown rice vinegar
Mihua Organic Brown Rice Vinegar is brewed from organic brown rice, rich in various organic acids, and contains no artificial additives. It is a high-quality version of regular rice vinegar and has obtained Tzu Chi Organic certification, making it very suitable for people who are "controlling or reducing sugar intake".
Genmai vinegar has a wide range of uses. It can be used as a dipping sauce for steamed dumplings, added to soups for flavoring, made into cold dishes, or used to pickle vegetables.
My favorite way to prepare it is as a cold dish, like the Japanese-style onion salad commonly found in Japanese restaurants. You can easily make it at home with just a few simple steps!

Ingredients:
1 onion
30g bonito soy sauce
Organic Brown Rice Vinegar 30g
5g of bonito flakes
practice:
1. Slice the onion into thin strips and soak it in ice water to remove its pungent taste.
2. Add bonito soy sauce, organic brown rice vinegar, and bonito flakes, and shake well.
3. Chill for 12 hours to allow the onions to absorb the flavor.

This dish contains less than 50 kcal. Onions can boost metabolism and improve immunity, making it a great choice for those on a sugar-reducing diet.
Rice Flower Organic Sushi Vinegar
Gu Sheng inherits Japanese brewing techniques and uses Taiwanese organic rice and organic sugar for natural fermentation. The sweet and sour ratio of the rice flower organic sushi vinegar is already adjusted, making it very convenient to use. Just prepare the ingredients and add the sushi vinegar to enjoy.
I usually eat mixed grain rice instead of refined white rice. It tastes just as good as vinegared rice, and it's richer in fiber and nutrients, and makes me feel fuller.
The ratio for making vinegared rice is 1:4~5. While the cooked rice is still hot, pour it into the organic rice vinegar and mix well. Let it cool, then add your favorite toppings and you're done!
During my diet, I eat about half a bowl of rice at a time, about 80g, which I enjoy with seaweed, smoked salmon, and lettuce. It's incredibly delicious!
Rice Flower Organic Apple Vinegar
Apple vinegar can boost metabolism and is a great drink during diet control. However, most commercially available vinegars are made by adding fruit juice, sugar and spices to rice vinegar, resulting in extremely high sugar content. In contrast, Gu Sheng's organic apple vinegar is made by naturally fermenting organic apple concentrate, with no added sugar and a refreshing apple aroma, which I really like and can enjoy with complete peace of mind.

My usual ratio is 1 teaspoon of rice puffed organic apple vinegar added to 200ml of ice water. It's tangy and very appetizing. Drinking a glass after a meal helps to cut through the grease. If my family prefers it sweet, you can add 1 tablespoon of honey for a sweet and sour taste, which is also quite nice!
Rice Flower Organic Grape Vinegar
Another fruit vinegar is Mihua Organic Grape Vinegar, which is naturally fermented using organic grape concentrate and has the same natural flavor with no added sugar.
Gu Sheng Rice Flower Organic Series is incredibly easy to use. Because of its naturally sweet and mellow ingredients, just a touch elevates any dish to another level, making everyone a master chef!
Fermented foods such as rice vinegar and fruit vinegar have many benefits for digestive function and overall health. The dishes made from them are not only delicious but also healthy. For example, I make a week's worth of dishes like Japanese-style onions and soft-boiled eggs at once and store them in the refrigerator. Whenever I crave them or want to eat them, I can just take them out and enjoy them, which reduces the chances of eating junk food and makes it easier to control my diet.
